Pumpkin spice season is here, and we’re upgrading the usual sugary latte with third wave coffee principles: source better beans, use real ingredients, and brew with precision.
With a Bruvi brewer, you can make a PSL and other pumpkin coffee favorites that actually taste like craft coffee, not candy- hot, iced, or cold brew style -without juggling multiple gadgets.
What “third wave” means for your PSL
Third wave coffee is all about transparency, quality, and technique. For pumpkin spice, that translates to:
- Better beans: a flavorful espresso or brewed coffee base that can stand up to spices
- Real ingredients: a balanced pumpkin syrup made from actual pumpkin and warm spices
- Cleaner extraction: consistent brewing that highlights sweetness and body, not bitterness
Bruvi helps you nail all three. The brewer scans the B-Pod and auto adjusts up to seven brew parameters for a dialed-in cup, and Hygienic Brewing sends coffee straight to your mug for pure flavor and no cross contamination.
Choose the right coffee base
Start with a flavor profile that complements pumpkin and baking spices.
- Espresso-forward PSL: Try Full Bloom, Euphoria Espresso or other chocolatey, medium-dark espresso pods for a classic café vibe
- Decaf espresso: Keep the ritual at night without the buzz; you’ll still get plenty of flavor with Oasis Decaf Espresso
- Balanced brewed coffee: A medium roast with caramel or nutty notes is perfect for a gentler, less sweet PSL.
- Low acid coffee option: Prefer something easier on the stomach? Choose a low-acid leaning roast, or make it as cold brew coffee for a naturally smoother cup.
Craft Pumpkin Syrup (the third wave way)
Skip the neon sauce. This small-batch syrup lets the coffee shine.
You’ll need
- ½ cup pumpkin purée
- ½ cup brown sugar or maple syrup
- ¾ cup water
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ¼ tsp each ground ginger and nutmeg
- Pinch of clove and a tiny pinch of salt
Simmer water, pumpkin, and sweetener over low heat for 4–5 minutes, stirring. Remove from heat, stir in spices and vanilla, cool, then strain if you want a silkier texture. Refrigerate up to a week.
Recipe 1: Classic Third Wave Pumpkin Spice Latte (Hot)
- Brew a double shot espresso with your preferred espresso pod.
- Warm and froth 6–8 oz milk of choice.
- Stir 1–2 tbsp pumpkin syrup into the espresso, then add milk.
- Optional: dust with cinnamon or cocoa.
A chocolate-caramel espresso meets a restrained, real-pumpkin sweetness. The coffee, not the sugar, leads.
Recipe 2: Iced Pumpkin Shaken Espresso
- Brew a double shot of espresso over 1 tbsp pumpkin syrup.
- Add ice to a shaker, pour in espresso mixture, and shake 10–15 seconds until frothy.
- Strain over fresh ice and top with a splash of oat or almond milk.
Barista tip: Shaking aerates the drink, brightening aromatics and giving café-style texture without extra sugar.
Recipe 3: Pumpkin Cold Foam Cold Brew
- Brew cold brew coffee with your Bruvi.
- Whisk or froth ¼ cup milk with 1 tsp pumpkin syrup until thick and glossy.
- Pour cold brew over ice and top with pumpkin cold foam.
Cold brew’s round, low-acid profile makes spices taste plush and dessert-like without feeling heavy.
Recipe 4: Pumpkin Spice Americano Coffee (Light & Aromatic)
- Pull a double espresso shot.
- Add 6–8 oz hot water for an Americano.
- Stir in 1 teaspoon pumpkin syrup and finish with an orange-zest twist or a pinch of cinnamon.
Less sweet, more spice. This version highlights espresso aromatics for a cozy, minimal-sugar cup.

Make it cleaner, make it better
- Cleaner extraction: Bruvi’s Auto Optimized Brewing helps avoid over-extraction, so your coffee stays sweet and balanced even with spices.
- Hygienic Brewing: Coffee brews in the pod, not in the machine, for pure flavor and less daily maintenance.
- Eco-minded end of life: Bruvi Guilt Free Toss® B-Pods are pre-portioned for less coffee waste and are designed to be tossed, because they degrade faster in the landfill without leaving microplastics behind.
- Cost control: Brew café-level pumpkin drinks at home for a fraction of the cost. Lock in 15% savings with Auto Delivery.
Dial in like a barista
- Milk matters: Whole milk gives the glossiest microfoam, but oat and almond are fantastic with pumpkin.
- Heat sweetly: Keep milk under ~150°F; hotter milk flattens sweetness and spice.
- Balance: Start with 1 tbsp syrup for hot drinks and 1–2 tsp for Americanos. Add more only if needed.
- Spice smarter: Cinnamon is front and center; use clove sparingly to avoid overpowering the cup.
